A seasoned hospitality professional and classically trained chef, Brent Berkowitz joined Olive & Finch Collective as vice president of operations in 2023. He attended California Culinary Academy prior to beginning his career in the industry over two decades ago, and following graduation, began working with Innovative Dining Group in Los Angeles. Over the next 18 years, Berkowitz would rise from general manager to director of development and operations before taking the job of senior vice president of operations at Sage Restaurant Concepts, a division of Sage Hospitality Group, in 2018.
After a year, he was promoted to chief operating officer, where he used his extensive expertise to oversee the group’s lengthy roster of independent restaurants. Following his time at Sage, Berkowitz served as the vice president of food and beverage at Paligroup Management, a real estate development and hospitality operating company based in Los Angeles.
In 2022, he returned to Denver and took on the role of vice president of operations at Punch Bowl Social before joining the team at Olive & Finch Collective, which includes chef-driven, scratch-made restaurants Olive & Finch and Little Finch, along with bakery and wholesale operations.
