Elliot Schiffer has been an operator and developer for some of the nation’s most notable restaurant brands. His experience spans across QSR, Fast Casual, and Upscale Casual segments, and across operations, finance, real estate, and franchise sales. Schiffer’s teams have been responsible for significant growth, margin improvement, and value creation. He is a graduate of Washington University in St. Louis and Northwester’s Kellogg School of Management. His career includes positions with Lettuce Entertain You, Smashburger and as CEO of growing fast-casual brand Mici Italian. He is currently the CEO of Escalante’s Fine Tex-Mex & Tequila – an esteemed casual dining chain in Houston, TX.
