Scott Lawton is the co-founder and Chairman of the Board of bartaco, a coastal-inspired restaurant renowned for its fresh, upscale street food and relaxed dining atmosphere. With over 25 years of leadership experience in the restaurant industry, Lawton’s expertise brings together innovative technology and an obsession with delivering excellent hospitality. He has played a pivotal role in setting a new standard for seamless guest experiences, introducing bartaco’s on-demand dining model and establishing bartaco as a beloved community staple. This groundbreaking approach earned bartaco the prestigious MURTEC Breakthrough Award from Hospitality Technology in 2022.
Before stepping into the role of Chairman, Lawton served as the Chief Executive Officer of bartaco and Uncle Julio’s and as the Chief Operating Officer of Barteca, overseeing bartaco and Barcelona Wine Bar. Earlier in his career, he held key leadership roles at Tribeca Grill and Big Time Restaurants. Lawton continues to be a thought leader, inspiring the next generation of restaurant innovators.
